A Healthy Stuffing for Your Thanksgiving Dinner!
If there's one side dish that I love to accompany my turkey the most, it's stuffing! Unfortunately, it's also one of the worst side dishes found on any American dining room table come Turkey Day.
Thanks to EatingWell.com, here is a recipe for a healthy Pear, Prosciutto and Hazelnut stuffing!
Ingredients:
- 3 teaspoons extra-virgin olive oil, divided
- 4 ounces of thinly sliced prosciutto, cut into strips
- 2 cups diced fennel bulb
- 2 cups of chopped onions
- 1/4 cup minced shallots
- 2 teaspoons minced fresh thyme
- 2 teaspoons minced fresh sage
- 1 teaspoon minced fresh rosemary
- 8 cups stale baguette or roll (preference of multigrain over sour dough) cut into 1/2-inch cubes
- 2 ripe, but firm pears, chopped
- 1/3 cup chopped parsley
- 1/3 cup chopped hazelnuts, toasted
- 14 ounces of reduced-sodium chicken broth
- 1/4 teaspoon salt
- ground pepper, to taste
Cooking Instructions:
- Preheat the oven to 350°F, and coat a 9x13 inch baking dish with cooking spray.
- Heat 1 teaspoon of oil in a large, nonstick skillet over medium heat. Add prosciutto and cook, stirring until crispy for about five minutes. Drain the meat with a paper towel.
- Wipe out the pan and heat the remaining 2 teaspooons of oil. Add onion, fennel and shallot and cook until softened and beginning to brown (approximately 6-8 minutes). Add sage, rosemary and thyme and cook for one additional minute.
- Transfer all of the items into one bowl and gently stir in the bread, pears, parsley, hazelnut and prosciutto. Add the broth and toss it all together to combine. Season with salt and pepper.
- Place the stuffing in the prepared baking dish and cover with foil. Bake for 40 minutes, remove the foil and bake until the top is beginning to crisp - an additional 25 to 30 minutes more.

i made this for easter last year and it was delicious! certainly a big hit.
i reccomend this for sure.
stuffing = one of the only reasons i like thanksgiving.
I applaud the idea of a healthy stuffing. To me, these ingredients sound delicious and I, personally, would give it a try. Honestly though, my family would never eat something that looked like that.
