  • Fried Friday: Sinfully Delicious Cupcake Recipes

    TGIFF, my fellow Healthkickers!

    I've been in the mood to bake. And I'm not talking about one of those sugar-free, low-calorie, flourless, tasteless, soy-filled cakes or cookies. No - I'm talking about a high-in-fat, dense, rich, gooey, sugary, candy-coated, delicious cakes or cupcakes. What can I say? I can only eat substitute snacks for so long!

    So my friend sent me this INCREDIBLE website that has recipes for some incredible sounding concoctions. My favorite so far?

    Apple cupcakes with caramel frosting.

    Not only is this fruity (so it's gotta be SOMEWHAT healthy, right?) but it's also a perfect sounding cupcake for fall. I mean come on... who doesn't love a nice fresh caramel apple when the weather gets cool?

    So here's the recipe! And you have to tell me if you try it so we can swap stories on just how great this cupcake is!

    Cupcakes:

    • 1 cup flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp cinnamon
    • 1/2 tsp nutmeg
    • pinch of cloves
    • 1 cup sugar
    • 1 egg
    • 1/4 cup oil
    • 2 cups peeled, diced apples

    Mix flour, baking soda, salt, cinnamon, nutmeg and cloves. In a seperate bowl, beat together sugar, egg, and oil. Add apples, and add flour mixture and beat until smooth. Bake at 350 for 30 minutes.

    Frosting:

    • 1/2 stick butter
    • 1/2 cup brown sugar
    • 1/4 cup heavy cream
    • 1 tsp vanilla

    Melt butter, sugar, and cream in heavy saucepan over medium heat. Bring mixture to a boil, and reduce to a simmer. Continue cooking and stirring for 5 minutes. Then, remove from heat and add vanilla. Frost cupcakes when they're cooled, and enjoy!

 If there was one drink I could not live with, it'd be WATER. While I do thrive off of energy drinks, I drink about 15 glasses of water a day. As far as my favorite foods go, I'll eat anything with cheese, chicken, and asparagus. Also, ANY kind of fruit!
