This past summer, one of my best friends was diagnosed with Celiac Disease. I knew of people before her who had it, but I never really realized how serious it can be.
At first, she took the news pretty hard, but at the same time was relieved to know her symptoms would get better. Almost a year later she still misses a lot of foods, but since her diagnosis has realized that there are actually a lot of options for a gluten-free lifestyle. It's just a matter of looking in the right places and becoming creative.
