  • 5-Minute Ice Cream Sundaes Under 250 Calories

    Lets face it; we all have a sweet tooth. At least I know I do. Mine likes to scream out from the depths of my stomach, "More! More! More!"

    I try to tame the beast by making my desserts rather healthy, while still being decadent and rich to satisfy my taste buds.

    This week I'm focusing on 5 recipes as an ode to my favorite type of dessert: ice cream sundaes.

    Don't get me wrong; I don't indulge in desserts every day. I most certainly don't if I haven't gotten in some form of exercise. I see desserts as a bonus for the extra calories I burned.

    But not to worry, even if you decided to take a day off and rest your muscles, these tasty treats won't even come close to tipping you over your daily calorie limit. Each one comes in under 250 calories. And trust me, you're going to love every bite.

    Choosing to start with a classic-pick me up (because it's Monday morning and we all need our cup o' Joe in whatever form we can get), this recipe is a remake of the Southern classic: Mud Pie. Robust coffee ice cream is topped with chopped pecans, fudge sauce and cookie crumbs.

    Did you know that pecans may play a strong role in protecting our nervous system and delay the progression of age-related motor neuron degeneration? Researchers believe the tasty nut's natural source of the antioxidant, vitamin E, my help protect the mind for the future.

    Tip: Only heat the fudge sauce for 15 seconds at a time. If it gets too hot you'll end up with ice cream soup instead of a sundae!

    Mud Pie Sundae

    Prep Time: 5 min; Total Time:5 min. Serves: 1

    Ingredients:

    • ½ cup light coffee ice cream
    • 1 Tbsp chocolate fudge sauce, warmed
    • ½ square chocolate graham cracker, crushed
    • 1 Tbsp salted pecans, chopped

    Directions:

    Scoop ice cream into a serving dish. Drizzle chocolate sauce over top then sprinkle on chocolate graham crackers and pecans.
