
According to an article in the April issue of Bon Appétit magazine, parsley is an herb forgotten by many, but incorporating it into your diet can give a boost to your health, along with invigorating your cooking. Chef Seamus Mullen of New York’s Tertulia uses it often in dishes for color. He also uses it for its anti-inflammatory properties to fight his rheumatoid arthritis, which he was diagnosed with in 2007. He found that parsley not only lent vibrancy to his cooking, but also improved his health.
